As a result, the exposed iron may begin to interact with the food, sometimes producing a noticeable metallic taste. Tomato-based sauces, chili, and similar dishes are common examples where this issue can arise. While brief contact with acidic ingredients is generally harmless, prolonged cooking is best reserved for non-reactive cookware such as stainless steel or enamel-coated pans.

Strongly aromatic foods present another challenge when using cast iron. Because the seasoning layer is slightly porous, it can absorb odors from ingredients such as fish, garlic, onions, pungent cheeses, and heavily spiced dishes. These smells can linger even after cleaning, potentially transferring to future meals and affecting their flavor. For instance, cooking a strongly flavored fish in your skillet may leave behind a scent that becomes noticeable the next time you prepare something mild, like pancakes or eggs.
